Old London Recipe: Melba Toast Quiche + Sweepstakes!
Have you ever tried Melba Toast before? Delicious! Ive been addicted to these crunchy crackers for years in fact, when I was pregnant with Isaac I craved Melba Snacks and hid them from my toddler and husband so I could eat the entire box myself. Theyre yummy alone, with your favorite dip, with soup, crumbled on salad, as mini sandwiches, topped with cheese and deli meat or hummus, and so many other ways!
But, you ask, are they kid-friendly?
My kids say YES! Seriously, I had to wrestle my boxes of crackers from them!
Since I first fell in love with these crackers, new flavors and snack shapes have hit the shelves the Bagel Chips are large and perfect for topping with cheese and serving at parties. Youll have to look for them in the cracker aisle next time you go through and see what types are available.
And now, a recipe that incorporates Melba Snacks into a delicious SIMPLE quiche (I love mix, pour, and bake recipes, dont you?):
Melba Toast Quiche
Ingredients:
15 Old London Sea Salt Melba Snacks, roughly chopped
8 Eggs, beaten
1/4 cup Light cream
1/3 cup Onion, chopped
1/3 cup Kalamata olives, pitted and chopped
1/3 cup Oil-packed sun-dried tomatoes, chopped
2/3 cup Feta cheese, crumbled
1 tsp. Salt
1 tbsp. ButterDirections:
Preheat the oven to 350 degrees F. Butter a 1 1/2 quart baking dish. Combine all ingredients until well-mixed and pour into the dish. Bake uncovered for 35 minutes or until the middle is set. Allow to chill slightly. Unmold from baking dish and slice. Serve with a small Greek salad.
I love quiche, and this recipe is a keeper! I changed some things around by adding veggies and cheddar cheese instead of Feta and it was so yummy. Even my very picky toddler ate it (and hell eat nothing but oatmeal and cheese crackers lately, its driving me crazy)!
